My Famous Italian Meringue
Is really not that difficult u need regular sugar water and egg whites you can also use some creme of tartar lets say depends on how much u want a regular meringue will take 6 egg whites 6 spoonful(i am talking big )spoon of sugar will be one for each egg white and enough water to cover the sugar now lets see oh! vanilla flavor too.
Get your egg whites and the creme of tartar if u don't have any u can use a pinch of salt helps too get them ready to writing point or peak...
Now hands on pan place sugar and water and vanilla in pot and heat till almost caramel point or till u get a ball that u can roll in fingers but is still tender...you will have to check all the time don't let it turn dark now this is very important check your whites still pretty stiff on peak point and add very slowly the hot caramel on it at the same time you run the mixer max speed you have to keep this up until the whole mixture is cool off otherwise will not stand.
When you using it as a topping for a pie wait till the pie is cool off naturally if still hot or too cold will make any meringue whip or crack that happens to most people and from my personal experience is that the reason.Good Luck !
